apricot and pine nut pilafi

1 onion, chopped
1/4 tsp ground cloves
3 pinches of saffron, crumbled
2-3 tbsp butter
2/3 cup dried apricots, chopped
1/4 cup raisins
1 1/2 cups white converted rice
3 cups of water
1/4 cup pine nuts, toasted

Saute onions, cloves and saffron in butter until golden. Add rice, and stir to coat grains. Add chopped apricots, raisins and water. Bring to a boil, then reduce heat to low and simmer for 20 minutes. Stir in pine nuts and serve.
