aloo gobi

1 onion, chopped
1 head of cauliflower, broken into flowerets
4 medium potatoes, peeled and cut into 1″ dice
10-12 cherry tomatoes, cut in half (or 1-2 tomatoes, diced)
turmeric, 1/2 tsp
cumin, 1 tsp
cayenne, 1/2 tsp
ginger, 1/2 tsp (or use fresh ginger, 1 tbsp)
olive oil, 1-2 tbsp
cilantro, 1 cup, chopped
water, 2-3 tbsp

Heat oil over medium heat. Add onions, spices, tomatoes and potatoes, and saute in a large saucepan over medium low heat for 10 minutes. Remove potatoes (leaving some of the onion/tomato in the saucepan) from pot, add cauliflower and a little more oil if desired, and saute for a few minutes, until partially cooked. Return potato mixture to saucepan, and add cilantro and water. Stir, and cook over low heat until potatoes reach desired consistency.
