curry chicken with lime & west indian curry powder

tangier than a traditional west indian curry chicken

2 tbsp vegetable oil

1 onion, chopped

2 cloves garlic, minced

1/2 tsp ground ginger (1 inch piece fresh ginger, minced, would be preferable)

2 tbsp west indian curry powder

6-8 skinless chicken thighs, cut into bite-size pieces, marinated in juice of 2 limes for 15 minutes

4 potatoes, peeled and chopped

3 carrots

1/2 tsp sea salt

pinch of cayenne

1 tsp sugar

2 cups of water, or more to taste

Heat oil in large saucepan. Saute onion and garlic in oil until softened. Add ginger and curry powder, brown for a couple minutes. Add chicken pieces to saucepan, reserving lime juice, and brown for a few minutes .  Add lime juice, water, potatoes, carrots, cayenne, salt and sugar and bring to a boil over medium heat. Make sure water level covers the chicken. Lower heat and simmer for 20-30 minutes until potatoes and carrots reach desired consistency.
