Sort of like calabacitas, but roasted. Could also add corn and/or onions to the mix.
2 zucchini, sliced 1 inch thick
1 tomato, chopped, or a dozen halved grape tomatoes
2 jalapenos, minced
1 tsp ground ancho chili pepper
1 tbsp cumin
1 tsp dried oregano, rubbed
1 clove minced garlic
2 tbsp olive oil
Preheat oven to 400 degrees.
Combine all ingredients in a large baking dish, and stir. Spread zucchini and tomatoes in a single layer, if possible. Roast for 20 minutes, stir, then roast another 10-15 minutes until zucchini is starting to brown.
