juice of 1 lime
1 1/2 inch piece of ginger, minced
1 jalapeno, seeded and minced
3 tablespoons of maple syrup
1 tablespoon of olive oil
pinch of freshly ground black pepper
1 lb of wild salmon fillets
Preheat oven to 350 degrees F.
Combine first 6 ingredients and mix well. Place the salmon fillets in an ovenproof dish and pour the mixture on top of the fillets.
Bake until the salmon flakes easily with a fork, which is usually around 20 minutes, but would vary depending on the thickness of the fillets.
I served this salmon with basmati rice and eggplant sauteed with garlic, ginger, jalapeno and onion.
