schwartze gruetze

Made an all blackcurrant version of rote gruetze which turned out quite well. Might use a little more cornstarch next time, to create a thicker pudding;)

Cooked 4 cups of blackcurrants, 3/4 cup granulated sugar and 1 1/2 cups of water in a saucepan over medium heat for 15 minutes. Stirred 2 tbsp of cornstarch into 1/2 cup of cold water, then poured cornstarch mixture into the saucepan. Stirred the mixture and continued to cook over medium heat for a few minutes, until the mixture had thickened and become shiny.

Goes well with rice pudding, vanilla ice cream, angel food cake, etc.

  1. Definitely have to try this (tho with local fruit – even red currents are a little rare in California!). Looks like a lovely alternative to summer pudding! Thanks for the recipe!
