baked apples with cinnamon, raisins and port

this was an improv dish….

4 apples, with bottoms intact, but the seeds and majority of core removed
2 tbsp of butter
1/2 cup brown sugar
1/4 cup raisins
1 tsp cinnamon

1/2 cup of port

Preheat oven to 400 degrees.

Mix butter, brown sugar, cinnamon. Add raisins.

Stuff apples with butter/sugar/cinnamon/raisin mixture. Moisten the cavities of the stuffed apples with port. Place apples into a ovenproof dish.

Pour remaining port into dish, and add a little of the brown sugar/cinnamon mixture to the port. Stir to dissolve.

Bake approximately 20 minutes, or until the apples look softened, and the port sauce at the bottom of the pan has become more syrupy.

Remove from oven, and serve warm, drizzling port sauce over apples.
