pork chops with sesame oil, meyer lemon, ginger and cajun spice blend

Admittedly, I did not pay close attention to the exact amounts since this was an improv recipe, but this is the general idea:
Preheat oven to 325 degrees F (convection). Place 3-4 porkchops in an ovenproof dish. Combine juice of 1 meyer lemon, 1 inch piece of ginger- peeled and minced, 1/4 cup white wine, 1/4 cup unseasoned rice vinegar, 2 tsp cajun spice blend, 1 tbsp roasted sesame oil in a small bowl, then pour over pork chops. Place in oven, and bake for 35-40 minutes (probably closer to 50 minutes if you don’t have a convection oven), turning once after the first 20 minutes.
