1 mango, peeled and diced
1 large avocado (or 2 small avocados), peeled and diced
juice of 1/2 large lime (or 1 small lime)
1 tbsp olive oil
1 jalapeno pepper, seeded and minced
2 tbsp of chopped cilantro
Combine jalapeno, mango and avocado in a salad bowl. In a small bowl, mix lime juice, olive oil, cilantro and a few shakes of cayenne (or more to taste). Pour over salad, and toss gently, to avoid mashing the avocado. Serve.
Could also add some jicama and/or a can of drained and rinsed canned black beans to this salad.
