baby rhubarb!

Harvested the first rhubarb of the season.

Roasted Rhubarb

2 cups of sliced rhubarb

1/3 cup of granulated sugar, or to taste

1/2 tsp of cinnamon, or to taste

Mix all ingredients in an ovenproof dish, then roast at 400 degrees for 30 minutes, stirring every 10 minutes. Serve on its own, or with vanilla ice cream.

Tart Roasted Rhubarb

2 cups of sliced Rhubarb

3 tablespoons granulated sugar (will increase to 4 tbsp aka 1/4 cup next time as this was a little too tart)

2 tsp lemon juice

1/4 tsp cinnamon

Mix all ingredients in an ovenproof dish, then roast at 400 degrees for 30 minutes, stirring every 10 minutes. Serve on its own, or with vanilla ice cream. Reduces to less than 1 cup.

Will use 8-10 cups of rhubarb in any future batches.

When I have more time, I hope to try out this rhubarb recipe.
