low sodium dinner in a hurry

A 30 minute dinner

Roasted Zukes & Tomatoes

Ingredients

2 large beefsteak tomatoes, cut into 2 inch chunks

2 medium zucchinis, cut into 1 inch slice

a few shakes of Italian seasoning (I use McCormick’s which contains no salt, just herbs.

1 tbsp olive oil

freshly ground black pepper to taste

Method

Preheat oven to 400 degrees. Mix all ingredients in a roasting pan. Roast for 25 minutes, tossing several times.

Pan-fried chicken with shallots, mushrooms, rosemary and thyme

Ingredients

6 chicken boneless, skinless chicken thighs

1 tbsp olive oil

1/2 shallot

dried rosemary to taste

dried thyme to taste

freshly ground black pepper to taste

6 cremini mushrooms, quartered or thickly sliced

Method

Cut chicken into 2-3 inch pieces, and season with pepper, rosemary and thyme. Heat oil in a large cast iron skillet, and pan fry the shallot for a couple minutes over medium heat.  Add chicken, and panfry over medium heat for 10 minutes. Add mushrooms, and cook until mushrooms and chicken until done. 

Serve with angel hair or your favourite pasta.
