  1. 10 cups sliced rhubarb
    1.5 cups of granulated sugar
    1 tsp ground ginger
    1 tsp ground cinnamon
    2 tbsp lemon juice
    Preheat oven to 375 degrees with convection on
    Mix ingredients in ovenproof dish
    Bake for 40 minutes, stirring every 10 minutes.
    Nice with yogurt, granola or ice cream
