lamb chops with coriander, mint, garlic, paprika & cumin

1 large clove of garlic, chopped
1 1/2 tsp sweet Hungarian paprika
1 1/2 tsp ground cumin
1 tsp ground coriander seed
10 mint leaves, washed and chopped
2 tbsp lemon juice
3 tbsp evoo

7-8 lamb chops, trimmed of fat

Preheat oven to 375 degrees F, with convection on.

Combine first 7 ingredients into a paste. Spread paste over chops, covering all sides. Place chops in an ovenproof dish, and bake to taste. Medium should take 30-35 minutes.
