improv borscht

2 tbsp olive oil
1 onion, roughly chopped
1 clove garlic, chopped
5 beets, peeled, and roughly chopped
2 carrots, peeled and roughly chopped
5 tomatoes, chopped
1 potato, peeled and diced
1 tsp ground cumin
2 bay leaves
2 tbsp chopped fresh dill
1/2 tsp freshly ground black pepper
4 cups of water
1 cup shelled fava beans
1/2 cup haricot verts, trimmed, and cut into 1 inch pieces
1 tbsp sugar (if desired)
3 tbsp wine vinegar

sour cream, to taste.


Saute onion in olive oil over medium heat for 5 minutes. Add carrots, beets and garlic, and saute an additional 5 minutes. Add potatoes, tomatoes, cumin, 1/2 the dill and the bay leaves. Bring to a boil, then simmer for 10 minutes. Add water, and bring to a low boil. Add fava beans, and simmer for 5 minutes. Add vinegar, sugar, haricot verts, and simmer for an additional 10 minutes. Stir in remaining dill and remove from the heat.

Serve in bowls, each topped with a dollop of sour cream, or more to taste.
