ginger, garlic & jalapeno scallops

1 tbsp butter

1 tbsp olive oil

1/2 onion, chopped

1 inch piece of ginger, peeled and minced

1 garlic clove, minced

1 jalapeno, minced

1 lb scallops

Heat oil and butter over medium heat. Saute onion for 10 minutes, until golden. Add jalapeno, garlic and ginger, and saute for another 2 minutes Add scallops, and saute until opaque, roughly 5 minutes.
