aloo gobi

Made aloo gobi tonight, using
olive oil
1 onion, chopped
1 inch piece of ginger, minced
2 jalapenos, seeded then minced
2 roma tomatoes, chopped
4 potatoes, peeled and cut into 2 inch cubes
1 tsp turmeric
1 tsp ground coriander seed
1 head of cauliflower, broken into florets

Sauteed onion until translucent over medium heat. Reduce to medium low heat, and add ginger, jalapeno, potato, tomato and spices. Saute for 5 minutes. Add cauliflower, and stir well. Cover, and cook for 25 minutes, stirring occasionally, and adding a little water from time to time to prevent any burning.
