meyer lemon & tangelo pernil

experimenting with a cilantro, cumin, oregano, garlic, Meyer lemon & tangelo marinade tonight.

Juice of 1 tangelo, juice of 1 Meyer lemon, 1/2 cup chopped cilantro, 2 tbsp cumin, 1 tsp oregano, 2 cloves of garlic (chopped), black pepper and a little olive oil. Pierced loin with knife, then marinated loin for 30 minutes, then baked in marinade at 300 degrees for just under 2 hours, turning and basting occasionally.
