sweet and sour cabbage soup

2 carrots, roughly chopped
1 celery stalk, roughly chopped
1 tbsp olive oil
2 cups diced canned tomatoes
1/2 cabbage, roughly chopped
1 can consomme
3 cups of water
1/4 cup of raisins
1 tbsp sweet paprika
1 tsp caraway
2 tbsp chopped fresh dill
1 tsp dried thyme
1/4 cup white wine vinegar
2 tbsp brown sugar

Saute carrot & celery in olive oil over medium heat for 5 minutes. Add cabbage, and saute additional 5 minutes. Add remaining ingredients, and bring to a simmer. Cover, and simmer for 30 minutes.

Adjust seasoning. Enjoy.
