tenderloin al pastor

1 pork tenderloin

1 20 oz can pineapple chunks in juice

1 tbsp ground cumin

1 tsp dried oregano

2 tbsp white wine vinegar

1/2 tsp ancho chili powder

1/4 tsp de arbol chili powder

1/4 tsp chipotle chili powder

2 cloves of garlic, minced

1/2 cup chopped cilantro

Preheat oven to 300 degrees F. Score tenderloin, then place in an ovenproof dish. Mix remaining ingredients in a bowl, then pour over tenderloin. Roast for 90 minutes, turning tenderloin occasionally. I serve this with oven-baked cornmeal or rice.
