interesting enchiladas 

What’s your favourite recipe/approach?

I made a stacked enchilada, with a layers of corn tortillas, monterey jack, tomatillo salsa, tomato salsa, sour cream, refried beans, chicken thighs sauteed with garlic, oregano, cilantro, cumin & jalapeno. Quite tasty, and less work than rolled enchiladas.
