Italian sausage, cabbage & rice soup

This was pretty good!
2 hot Italian sausages, cut into coins
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, chopped
1 rib celery, chopped
2 carrot, chopped
1/2 tsp dried Italian seasoning
1/2 cup white rice
4 cups of chopped cabbage
2 cups of canned tomatoes, diced
3-4 cups of water
1/2 cup parsley, chopped

In a frying pan, saute sausage until browned in 1 tbsp olive oil. Drain, if desired.

In a stockpot, saute onion in 1 tbsp olive oil until softened and translucent. Add celery, carrots and garlic, and saute a few minutes. Add cabbage and stir. Add tomatoes and water, and bring to a simmer over medium heat. Add Italian seasoning, rice and sausage. Simmer partly covered over medium low heat for 30 minutes, until rice is cooked, stirring occasionally. Add additional water if needed. Stir in parsley, adjust seasoning if desired, and serve.
