cumin, oregano & lime chicken

Preheat oven to 350 degrees F.

Mix the juice of 1 lime, 1 tsp ground cumin, 1 tsp dried oregano, 2 chopped cloves garlic, 1 tsp ancho chili powder, 1/4 tsp california chili, 1/4 tsp freshly ground black pepper, a pinch of salt and  1 tbsp olive oil in a small bowl. Pour over 10-12 chicken drumsticks or thighs. Bake for 1 hour, basting occasionally.

cabbage, avocado & cilantro slaw

juice of 1/2 lime

1 tbsp olive oil or grapeseed oil

1 tsp sugar

1/2 tsp cayenne pepper or new mexico chili pepper

1 tsp of Cholula hot sauce (or your favourite hot sauce)

1/2 cup chopped cilantro

2 cups shredded cabbage

2 carrots, grated

2 avocados, peeled and chopped

Mix oil, lime juice, sugar, chili pepper, hot sauce in a small bowl.

In a large bowl, mix cabbage, carrot, cilantro and avocado gently. Stir in oil and lime juice mixture.
