ravi goes to jamaica lentil soup

2 tbsp olive oil

2 tbsp minced ginger

1.5 cups of red lentils, sorted and rinsed

1 cup dried apricots, chopped

1 beefsteak tomato, chopped

6 cups of water

5 tsp Jamaican curry powder

1/2 cup chopped cilantro

Saute ginger in olive oil over medium heat for 5 minutes. Add lentils, apricots, water, tomato and curry powder. Bring to a simmer over medium heat, stirring occasionally. Cook for 20 minutes. Add cilantro, heat through, and serve.
