Ottolenghi & Tamimi’s Mejadra

I used 2 onions instead of 4, and long grain white rice instead of basmati. I increased the amount of water to 2 cups. Time-consuming recipe for a week night, but delicious. Yotam Ottolenghi’s Mejadra recipe in the Guardian
