interesting enchiladas What’s your favourite recipe/approach? I made a stacked enchilada, with a layers of corn tortillas, monterey jack, tomatillo salsa, tomato salsa, sour cream, refried beans, chicken thighs sauteed with garlic, oregano, cilantro, cumin & jalapeno. Quite tasty, and less work than rolled enchiladas.
Will use this as inspiration tonight: peruvian shrimp and corn chowder . Will add some tomatoes, oregano, parsley & garlic (which are used in other chupe de camarones recipes), substitute sweet potatoes for the squash, and milk for the cream called for in the recipe.
